penne rosa recipe

I (anna) was craving noodles & co. penne rosa and I decided I may as well just whip it up at home. this was SO easy and SO GOOD. give it a try and report back, please! i didn’t follow a real recipe, so measure some of these things with your heart. it’s very forgiving/doesn’t need to be overly precise!
ingredients:
- 1 lb penne pasta
- 1 jar marinara sauce (24oz)
- 1 cup heavy cream
- 1–2 tbsp butter
- 2-3 garlic cloves (minced)
- 1/4 cup reserved pasta water
- 1-2 handfuls of grated parmesan cheese
- 1 pack sliced baby bella mushrooms
- a few handfuls of spinach
- chicken cutlets
- olive oil
- red pepper flakes
- garlic salt
- paprika
- salt + pepper
instructions:
- Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1/4 cup pasta water before draining.
- Heat a drizzle of olive oil in a skillet over medium heat. Add sliced baby bella mushrooms, season with garlic salt, and sauté until browned and tender. Set aside.
- Season chicken cutlets with garlic salt and paprika, then grill or cook in a skillet until fully cooked through. Slice into strips and set aside.
- In a large skillet or saucepan over medium heat, melt butter. Add garlic and cook until fragrant
- Add marinara sauce and simmer for 3–5 minutes.
- Lower the heat and stir in heavy cream until fully combined and smooth.
- Add parmesan cheese and stir until melted into the sauce.
- Add red pepper flakes, S&P, and a splash of pasta water until the sauce becomes glossy and silky.
- Toss in pasta, mushrooms, spinach and sliced chicken until evenly coated.
- Top with extra parmesan and more red pepper flakes before serving.
